I made this and then had it with my salad today. it is tasty

planning ahead
Today that is what my meeting was about. At times you think that you are planning ahead to events and things like weddings but do we really plan ahead as to what we should be eating and doing each day. In the end if we do we would be so much better off as then we would get all the fruits veges dairy ect in that we need to. I am really going to try to plan my days ahead to see how that all works and see if i dont need some of the snacks that i sometimes think i need.

Looking back

thought i would look back 2 1/2 yrs ago and compare what it was like then to what it is like now.
Back then i would be able to get on my elleptical for maybe 10-15 min and that was about it on a level 1 no way could i do anything higher. Now i can go for an hour at a level 4-5 depending on the day. I would go up and down the stairs all winded and be tired at times. Now i do not really think about it i just go up and down all day long. The types of foods i would eat would be pizza, hamburgers french fries lots of pasta loved carbs and sweets. Now I tend to eat higher protein foods whole wheat pasta lots of fruit and veges yogurts pudding for a snack now. I do not feel so tired now unless my sleep is interupted. I now seem to not have as much free time as i used to because now i am exercising and preparing foods that take longer to do but it is a good thing to be doing. Before my weight was obese now it is just about normal the extra weight i have now is more from excess skin than anything else. I also have low cholestrol and all too so on the good side of it all I really am in good health.

Baked Chicken with Peaches INGREDIENTS 4 4oz skinless, boneless chicken breast halves 1/2 cup brown sugar 3 fresh peaches - peeled, pitted and sliced 1/8 teaspoon ground ginger 1/8 teaspoon cinnamon 1 tablespoons fresh lemon juice DIRECTIONS 1. Preheat oven to 350. Spray 9x13 inch baking dish. 2. Place chicken in the prepared baking dish, and sprinkle with 1/4 cup of brown sugar. Place peach slices over chicken, then sprinkle with remaining 1/4 cup brown sugar, ginger, cinnamon, and lemon juice. 3. Bake for about 30 minutes in the preheated oven, basting often with juices, until chicken is cooked through and juices run clear.

thoughts

This past week has been a busy one and then one that is also full of thought and thinking. Last week we celbrated out 23rd wedding anniversary as we will be busy this weekend. We went to some parks and to eat it was all fun. We went to the park in forest park and passed the hospital where Noah was taken after the accident and that was really hard to see as i have not really been past it since last year. After that I have really been thinking of Dawn and her family a lot more as his birthday is today and he would of been 6. I just thought last night after celebrating michelles 19th how much of a great young man he would of been and then i was thinking of all the fun he was and what a special boy he was. I then thought of Dawn and Travis and what they are all going through right now.
On a better note though it is hard to think that my baby is 19 now and in college and working at the youth center playing with the kids and just having so much fun. The time sure does go fast and it is fun to see them all grow up and go out on their own and do so well with things.
