a few things I am grateful for....


I woke up this morning and was in a better mood i have been tired and when i am tired I am grumpy and not motivated to do much. The one that seems to have to deal more with my grumpiness is Ben so was thinking of how much he does for me and how wonderful it is to have him by my side. In this world where there are so many problems and all it is nice to come home or have him come home and be a team. He is my big number one supporter in anything i do. He supported me do weight watchers and at times I kept telling him but it seems to cost more to eat healthy and he would come back and say but you are worth it. Everytime that i would come up with something negative about it or anything he normally can find a positive for it. So just wanted to put out that I love him and he is such a great guy even when i am grumpy at him.

got bored

The other day i was having this boredom day with food. I think you just get stuck in a rut and make the same type of foods and all and then feel like you should keep doing that as it works.
The other day i was just surfing for recipes and decided to try this one out. It was actually really good and doing core for weight watchers i did not have to figure out any calories or points for it.
It made enough so have plenty for leftovers for a few meals.

Tamale pie (core)
1 c yellow cornmeal 2 1/4 c cold water + 1 bouillon cube (or use broth)
1 lb lean ground beef
1 onion, chopped
1 bell pepper, chopped
4 tsp chili powder
4 cloves garlic
1 tsp salt Dash pepper
1 (6 oz) can tomato paste 1 can Ro-Tel original (I have also used DelMonte tomatoes with mild chiles)
½ bag frozen kernel corn
1 can black beans, rinsed
FF or soy cheddar shreds
Preheat oven to 350*. Spray a 9 x 13" casserole pan with Pam.

Bring 2-1/4 cups water plus bouillon cube to a boil.
Stir in cornmeal, and whisk until fairly thick and most lumps are gone (just a few minutes). Spread into bottom of casserole pan and set aside. Brown beef, onion, and green pepper. Add chili powder, garlic, salt and pepper, and mix well. Add tomato paste, Ro-Tel, corn, and black beans. Spread over the cornmeal crust and top evenly with cheese. Bake 20-25 minutes at 350*.

I think the secret to really staying focused is find new recipes that are good and healthy and just sticking to things you should eat and keep exercising and staying on track.

one of those weeks so far

Just seems like i am getting not much done and then am tired on top of it.
I have been training with weight watchers so am doing that more this week so is throwing
my schedule off but i think after the training I will be able to see exactly when i will
be working and it won't be so bad. I do like leaning all the behind things at weight
watchers and all so that is fun and it will keep me motivated to keep losing the extra
few pounds that they think I should. I just keep doing what I should is all I can do and
that is good for me. I know it would be easy to get frustrated but I look back and see
what I have done and I then see the bigger picture and know that I am doing great.
I know I did not put the weight on over night so no reason at all to think that I should
be in great shape and all overnight so that is what gets me to get motivated again
when i lose my motivation. I really do not lose it that often but when i do I have a
great support system at home and some great computer friends that have helped me
along so great.

I hope to get back into blogging a bit more when i get into a routine hopefully not
too far inbetween blogs though.

the week of sicknesses



This week both the girls have found out they were sick or had something wrong with them. Michelle went to the dr this past friday and for what i thought would of been for allergies or for strep throat and came back saying she had mono. not something i thought of when she went to the dr. Her dr told her no work for a week and to rest and drink lots of fluids to take her vitamins and no volleyball or ultimate frisbee. It is really hard keeping her to stay put and not do too much. She will go back to work on Monday so hope she is well rested by then.


Keah went to the dr today as she has been having this foot/ankle pain. Thought it was her shoes but come to find out she has tendinitis so she is off work now until thursday and she is to do exercises for her leg and take aleve and rest it. She is not too happy about not being able to work but it will be ok. Work was not happy but they understand it.


Hopefully now nobody else will get sick or anything we dont need anymore right now.

Tonight






I thought i would add what i have created for tonight at church. It will be fun to see how it all turns out. We are doing a camp recap of camp that happened in July with awards and a slideshow of some of the pictures that we all took. They will then get a cd of all the pictures that we took. Two of the girls were helping with the awards and one of them e-mailed me and asked me about doing an award for their leader Melinda and i thought that would be great. She already had an idea and so when i heard the idea i told her i had some thoughts and would be great to do a scrapbook page for her being a gold medal winner. and with all the other awards they have candy to go with them so thought we could get some gold coins and could go with that. I found the gold coins not so easy this time of year and then came home and got to work with the scrapbook page. I really like how it turned out and i think she will like it too. The one girl has seen the page and said she just loved it. It is fun learning to do some of the digital scrapbooking although i still like the paper one better. I am a hands on feeling type person.

It is sunday



It is the last day of August so seems summer is over and get to go back to the fun of the school year and the schedules we all make ourselves do. Sometimes i like schedules other times i really hate them.


Keah will be 22 this week hard to think she is that old already. Where has the time gone. Just a few pictures of her as a baby not real young as i do not have any of those on the computer. What things have changed in the 22 years is amazing too. We still have a film camera but we rarely use it as it is so much easier to use the digital ones.
