got bored

The other day i was having this boredom day with food. I think you just get stuck in a rut and make the same type of foods and all and then feel like you should keep doing that as it works.
The other day i was just surfing for recipes and decided to try this one out. It was actually really good and doing core for weight watchers i did not have to figure out any calories or points for it.
It made enough so have plenty for leftovers for a few meals.

Tamale pie (core)
1 c yellow cornmeal 2 1/4 c cold water + 1 bouillon cube (or use broth)
1 lb lean ground beef
1 onion, chopped
1 bell pepper, chopped
4 tsp chili powder
4 cloves garlic
1 tsp salt Dash pepper
1 (6 oz) can tomato paste 1 can Ro-Tel original (I have also used DelMonte tomatoes with mild chiles)
½ bag frozen kernel corn
1 can black beans, rinsed
FF or soy cheddar shreds
Preheat oven to 350*. Spray a 9 x 13" casserole pan with Pam.

Bring 2-1/4 cups water plus bouillon cube to a boil.
Stir in cornmeal, and whisk until fairly thick and most lumps are gone (just a few minutes). Spread into bottom of casserole pan and set aside. Brown beef, onion, and green pepper. Add chili powder, garlic, salt and pepper, and mix well. Add tomato paste, Ro-Tel, corn, and black beans. Spread over the cornmeal crust and top evenly with cheese. Bake 20-25 minutes at 350*.

I think the secret to really staying focused is find new recipes that are good and healthy and just sticking to things you should eat and keep exercising and staying on track.
